You can create tags by going to the Setup menu and selecting Tags.
You can associate tags with Customers, Services, your own Staff and Price Groups by visiting the menu item of the same name (most are in the Setup submenu).
When Adding a booking (potentially via the Calendar) you will be able to click to select and deselect the tags that should be applied to a given booking.
View Bookings, the Calendar and Booking History all allow you to filter the displayed bookings according to the tags that are present.
View Bookings, Invoicing and Booking History list the tags attached to individual bookings.
